Viking wear is mechanical and fairly predictable, and the oven glow-bar igniter is the part we replace most. It still glows orange, which convinces everybody it is healthy, but it has aged past the current draw needed to hold the gas safety valve open — so the oven takes longer and longer to light, then one morning does not light at all. The giveaway is that it will often catch on a second attempt while the cavity is still warm and refuse from cold, which is why owners are certain the fault comes and goes.
We measure igniters on current draw rather than on whether they light up, because glowing and working are not the same test, and that single measurement is the most common misdiagnosis in this trade. The other recurring Viking jobs are oven calibration and door hardware. A professional oven door is heavy enough that worn hinges and tired springs let it sit a fraction proud of the frame, and the cavity then bleeds heat past the seal all the way down one side. That reads to the cook as an oven fault and is actually a hardware fault, which is a much smaller repair if it is caught while the door still closes.

The wine cabinet we put in during the remodel held its top zone and crept up on the bottom one all summer. Two other outfits had been out and both wanted to sell me a board. He took the reading down at bottle level and it was the fan in that zone.
Cubes came out short and hollow all through August, and with people in and out of the house from the beach we go through a lot of ice. It was the filter cartridge and ice forming in the fill tube. He stayed and watched a whole batch drop before leaving.
The Wolf had been running cool for the best part of a year. He tested the sensor before touching anything else, then sat and watched the real temperature through a full cycle. One part. Baking is normal again. Tidy, explained everything, no fuss.

Factory-approved parts. We stay out of the busy market in pattern control boards and generic fan motors. On a condenser fan motor near the water, a non-original tends to be back on the fault list within a season or two, and the second visit costs more than the saving was worth.
