We are a Sub-Zero repair outfit based in Dana Point, and the working day runs the length of South Orange County: the harbor and Capistrano Beach, San Clemente from the pier up through Talega, then Monarch Beach, Laguna Niguel, San Juan Capistrano, Ladera Ranch, Las Flores and Coto de Caza. On the coastal strip the enemy is salt. Marine air carries it in on the afternoon breeze, it settles on the aluminum fins of a condenser that is pulling that same air through a grille all day, and it corrodes them into a chalky crust that no longer moves heat. We see that first as a refrigerator that holds overnight and drifts every afternoon, which owners describe as intermittent rather than broken. Inland, salt is not the problem and heat is. A condenser that is merely dusty copes perfectly well in beach air and cannot cope with a July afternoon in Coto de Caza or Las Flores.
The work is Sub-Zero above all: built-in refrigerators and the newer columns, all-freezer units, PRO series, dual-zone wine storage, and the undercounter drawers and beverage cabinets that go into island and butler's pantry runs. These kitchens are rarely one brand, so the cooking side gets the same treatment. Wolf, Viking and Thermador ranges and wall ovens are diagnosed on site and repaired in the cabinetry, and nothing gets pulled out of a run of custom panels unless the fault leaves no other way to reach it.
There was a whine behind the grille that climbed through the afternoon and went quiet by evening. Condenser fan, worn out from the summers we get out in Ladera Ranch. He had one on the truck and the kitchen is silent again.
Frost kept coming back in the freezer column two weeks after I had cleared it out by hand. He ran a strip of paper round the door first and found the seal slack down one side, which he reckons the damp mornings here are hard on. New gasket sorted it.
Our old Viking would light second time when the kitchen was already warm and refuse completely first thing in the morning. He measured what the igniter was actually drawing rather than just looking at it glow, and that was that. Cleaned up a corroded burner cap too.
