Dual refrigeration is the thing to understand before anyone opens a Sub-Zero built-in. The refrigerator and the freezer each have their own compressor, their own evaporator and their own sealed circuit, and no air passes between the two compartments at all. That is why a hard-frozen freezer above a warm refrigerator is better news than it sounds: half the machine has already proved itself, and the fault has to sit on the refrigerator circuit. Where the house sits decides which half of the machine gives way first. Within a few streets of the water at Dana Point Harbor, Capistrano Beach and the streets above the San Clemente pier, the condenser is the recurring finding: salt in the fins, a coil that looks clean and moves almost no air, seized grille hardware and a fan hub carrying deposit on one side. The whole cabinet then runs warmer than it was designed to, and the refrigerator circuit, which has less margin than the freezer circuit, is the one that starts drifting by mid-afternoon and recovering overnight. Owners report that as intermittent, which is exactly why it goes unaddressed for a season or two.

The Wolf had been running cool for the best part of a year. He tested the sensor before touching anything else, then sat and watched the real temperature through a full cycle. One part. Baking is normal again. Tidy, explained everything, no fuss.

The phone is answered 24/7, holidays included. Refrigeration is not polite about timing, and a Friday evening, freezer and wine cabinet just loaded for the weekend, is when we hear from people most.
